In an ongoing effort to help strengthen our local food system and eat more sustainably, we recently subscribed to OlyKraut’s seasonal CSA. Now every Thursday we get a new delivery of fresh organic locally-made sauerkraut deliciousness from the burgeoning women-owned company. So far the spicy curry kraut is my favorite, but there are still many different flavors that we haven’t tried yet, including spring nettle, spicy garlic and sea vegetable kraut. Supporting the local economy never tasted so good.

Supporting Local Farmers

The small raw food company has been rooted in Olympia, Washington since 2008, and they get nearly all of their ingredients from nearby organic farmers. OlyKraut offers some insight into the process involved in creating their organic cultured goodness, as well as some of the many benefits of fermented foods:

“Our seasonal approach to processing captures the peak of taste and abundance at harvest time. All of our culinary creations celebrate life, raw tradition and ancient preservation techniques that enhance and intensify the nutritional value of raw vegetables. Filled with probiotics like Lactobacilli, our refreshing raw kraut strengthens immune function, supports digestion, and revitalizes the body after using antibiotics. We hand-make each batch of fermented vegetables using organic ingredients sourced from as many local farms as possible.

We want to see Olympia become a sustainable city that has access to healthy foods year-round. Fermented vegetables are preserved naturally with Lactobacillus, so they last a very long time in the fridge (if you can keep from eating them).”
